American Flatbread, will soon be coming to Chicago. The Vermont based restaurant will be located in Giddings Plaza at 2326 West Giddings in Chicago's Lincoln Square neighborhood, and is slated to open sometime in the spring or 2011. With locations in Oregon, Vermont and Virginia, the Lincoln Square location will seat 125 and feature a brewery. The restaurant opens at 4:30 p.m. Monday-Thursday, but on Fridays, Saturdays and Sundays, they open at noon. Ovens used at American Flatbread are made from clay, sand, hay and branched. These materials need to cure for a total of 3 months before the oven can be used.

The owner of American Flatbread, Fred Gale, grew up in the Chicago area and hopes to form relationships with local farmers who can provide organic ingredients. The fresh ingredients at American Flatbread will feature nitrate-free sausage, organic tomato sauce and organically grown wheat crust. If this restaurant is half as good as the one I went to in Oregon, it will serve the Lincoln Square area well. The pizza flatbread that I had was amazing and the ingredients were so fresh. I hope the menu doesn't change much when they open here.
