The owner of American Flatbread, Fred Gale, grew up in the Chicago area and hopes to form relationships with local farmers who can provide organic ingredients. The fresh ingredients at American Flatbread will feature nitrate-free sausage, organic tomato sauce and organically grown wheat crust. If this restaurant is half as good as the one I went to in Oregon, it will serve the Lincoln Square area well. The pizza flatbread that I had was amazing and the ingredients were so fresh. I hope the menu doesn't change much when they open here.
