2 ½ cups all purpose flour
¾ cups wheat flour
2 ½ cups pumpkin puree
4 eggs
2 teaspoons baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
¾ cup canola oil
¼ teaspoon ground cloves
¼ teaspoon ground ginger
1 ½ cups brown sugar
½ cup honey
1 cup applesauce
1 ½ cups walnuts or pecans (optional)
½ cup raisins (optional)
Directions:
Preheat oven to 350 degrees. Spray 3 7x3 bread pans with non stick cooking oil spray. Measure out all ingredients and add them all together in a large mixing bowl. Mix them together by hand or with a hand mixer until well blended. Pour the mixture into the bread pans and bake for approximately 1 hour. The bread will be a bit darker due to the brown sugar and honey but this is fine. Cool on a wire rack. Slice and serve. Add a dollop of whipped crème and sprinkle with ground cinnamon for a great presentation! This can be made and frozen up to two weeks prior to eating. This is a holiday favorite and it is so easy to make!
Addendum: Some of my family are finicky and will not eat nut so I have to make 1 loaf with nuts and 2 without. I cut the nuts down to ½ cup and add them once I have the mixture in the pan and swirl the nuts around. The raisins can be added this way as well.
