An Easy Version of Pumpkin Bread to Keep Your Thanksgiving Healthy - This is a very healthy variety of an old tried and true recipe that has been in my family for many years for pumpkin bread. My family likes the low fat healthy version of the bread better than the original. It is extremely easy to make.

2 ½ cups all purpose flour

¾ cups wheat flour

2 ½ cups pumpkin puree

4 eggs

2 teaspoons baking soda

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

¾ cup canola oil

¼ teaspoon ground cloves

¼ teaspoon ground ginger

1 ½ cups brown sugar

½ cup honey

1 cup applesauce

1 ½ cups walnuts or pecans (optional)

½ cup raisins (optional)

Directions:

Preheat oven to 350 degrees. Spray 3 7x3 bread pans with non stick cooking oil spray. Measure out all ingredients and add them all together in a large mixing bowl. Mix them together by hand or with a hand mixer until well blended. Pour the mixture into the bread pans and bake for approximately 1 hour. The bread will be a bit darker due to the brown sugar and honey but this is fine. Cool on a wire rack. Slice and serve. Add a dollop of whipped crème and sprinkle with ground cinnamon for a great presentation! This can be made and frozen up to two weeks prior to eating. This is a holiday favorite and it is so easy to make!

Addendum: Some of my family are finicky and will not eat nut so I have to make 1 loaf with nuts and 2 without. I cut the nuts down to ½ cup and add them once I have the mixture in the pan and swirl the nuts around. The raisins can be added this way as well.
