How One Woman Baked Her Way Out of Foreclosure

Angela Logan of Teaneck, New Jersey, recently found herself facing the possibility of foreclosure. The New Jersey newspaper, The Record, covered her story in great detail and she has become an inspiration to people all over the world. Angela baked her way out of a scary situation.

The Record reported that Logan had made a deal with her mortgage company to restructure the mortgage payments, in order to be able to afford to stay in her house. With the deadline for the first $2559.94 payment coming due, she didn't know how she would come up with the money. She is an actress and divorced mother.

Desperate, she knew she could bake a delicious frosted homemade apple cake. She decided to call upon her friends to help her raise the needed money. She would charge $40 for each cake and try to sell 100 of them. Her idea was to sell the cakes to people who attend her church and the local college which she attends. She called her creation a "mortgage cake".

The Record reported each day on Logan's progress with her endeavor. With the newspaper and internet coverage, she soon had more orders than she could handle. Her story was also picked up by the local and national media and even received some international coverage.

Moved by the story and wanting to contribute to the local community, the manager of a local hotel, the Hasbrouck Heights Hilton, offered Angela the use of an oven in the hotel's commercial kitchen. This way, she could bake ten cakes at a time instead of just two in her kitchen at home.

It's lucky that she moved this operation out of her home because some local Teaneck residents complained to authorities that Logan was operating a commercial business out of her home without the proper permits. By the time the town officials came by her house to issue warnings, she was already baking at the Hilton.

A non profit baking company from Long Island, New York called Bake Me A Wish has made a deal with Angela to sell her Mortgage Apple Cakes, due to the huge demand. So she has moved out of the Hasbrouck Heights Hilton and onto a commercial bakery. It's a story that most people only dream of.

I am personally inspired by Angela Logan's determination and never-give-up attitude. Many people who are facing foreclosure are in denial or don't quite know what to do to help themselves. Angela Logan blazed forward and looked to her family and friends for help. She wasn't looking for charity though. She knew her cakes could make people happy and that she was giving her customers something in return for their money.
