Ingredients
Serves 10
4 Cups Cooked and Diced Boneless chicken breast
6 Cans Swanson chicken broth
2 Cans Sliced carrots (any brand) mushed
1 Bunch Fresh Minced or Diced Green Onion
1 Bunch Fresh Minced or Diced Celery
1 Cup Rice (optional)
1 Bag Egg noodles(optional)
1 Tsp Salt (Optional)
1/2 Tsp Fine Black Pepper (Optional)
1/2 Tsp Tony Chashere or Seasoned Salt
12 Quart Stock/Cooking Pot with Lid
1 Large Cuttin board
1 Tongs
1 Chef's Knife

Prepare
*Finely chop, or dice Green Onion, and Celery. Set aside.*Drain both cans of carrots, pour drained carrots into a bowl and mash them with a whisk to desired consistency. My kids Love that part. Set aside

Soup Base
In a 12 Quart Stock Pot Combine 6 Cans Swanson Chicken Broth and raw, or frozen Chicken breast. Add 1/2 Tsp salt and Chicken Breast. You can use Raw,frozen chicken breast as they will cook. Turn onto high heat until broth comes to a boil. When broth is boiling turn to medium low heat and let cook for 30 minutes.(Some stoves take longer than others. Cooking times may vary). If you are uncomfortable judging Poultry use a meat thermometer to check the inside Middle Temperature of the chicken breast.The temperature should be 180F when fully cooked.3
Chop:
Place Large cutting board near the stove. Use the tongs to pick the chicken breast from the pot. Hold over pot and let drain for a few seconds, then place chicken on cutting board. Leave broth in pot to put chicken back into after cutting. (Please do not strain the broth you will lose flavor.)It is easier to pull all 4 of the breasts out at the same time to allow a few minutes to cool. When chicken is cool enough to handle safely, chop,dice,or mince All 4 chicken breast. Add chicken breast back into cooked broth.4
Combine and cook:
Combine mashed carrots, cut celery, and cut green onion with cut chicken in Stock Pot. This is a great time to let your older kids (8yrs old and up) learn to put ingredients into the pot. Add Pepper and Seasoning to taste. Allow Mixture to come to a full boiling, stirring often. When boiling turn heat down to medium low and let simmer for 30 minutes, stirring often. (With a long wooden spoon your kids can help stir) Add Rice or Egg noodles. let cook an additional 5-10 minutes stirring often until the Rice or Noodles are done.5
Serve
This recipe will serve 8 people in my home. Great for Cold rainy nights to brighten spirits. Works wonderfully well to help a sick child feel better as well. If you want to add color to soup just use a little Parsley when you serve the dish.Tip
If you like a thicker, heartier Soup or Stew use more of the Egg Noodles, or Rice. Combining the Egg Noodles, and rice together in the pot may cause soup to stick to pot, and will change the flavor of the Soup.For children who like more juice add more chicken broth. Using water instead of chicken broth for the base will change the flavor.
