Appetizers can be served as a meal when you make these hearty recipes. Easy on you because your guests can serve themselves.

Stuffed Mushrooms: Who doesn't like stuffed mushrooms. They can be stuffed with just about anything. And you can use any mushroom. Try this version using button mushrooms. 24 mushrooms, cleaned with stems removed and reserved, 1 shallot minced, 1 tsp minced garlic, 6 oz softened cream cheese, 1 tbl chopped fresh parsley. Preheat oven to 325. In a small skillet cook shallot and stems in 1 tbl olive oil and butter til tender, stir in cream cheese and garlic, remove from heat. Lay mushrooms cap side down in 9 x 9 pan sprayed with nostick spray. Fill each mushroom with cream cheese. Bake uncovered for 20-25 minutes. Remove from oven and sprinkle parsley on top.
Sandwich Pinwheels: 4 12" flour tortillas or flavored flat bread, 2 blocks cream cheese softened, 1 pkg dry ranch dressing mix, 2 green onions chopped, 1 small jar diced pimiento, 1 can sliced black olives, 1 can diced green chilies, 1 bunch of arugula or baby spinach, 1 1/2-2lbs thin sliced deli chicken or turkey. Mix together the cream cheese, dressing mix and green onions. Spread cheese evenly out on tortillas. Cover cheese with greens then evenly spread the olives, pimientos and chilies. Lay meat on top and roll up. Place tortillas in plastic wrap and chill for 2 hours. Remove from wrap and slice into 1 1/2" slices. Serve with slices laying down on platter lined with romaine leaves.

Crab Club Pizzettes: 1 pkg shredded crab, real or imitation,1 pkg frozen white rolls, thawed, 1 c. alfredo sauce, 1/2 c. diced tomato, 1 c. shredded mozzarella, 2 c. salad greens chopped, 8 sliced bacon crumbled and ranch dressing.
Preheat oven to 400 degrees. Flatten out rolls into 5" circles. Place on cookie sheet. Top with alfredo sauce. Divide crab on top then cheese and bacon. Bake for 10-12 minutes. Serve topped with tomato, greens and ranch dressing.
These will impress your guests. Remember, you've done your part, now kick back and enjoy the game and let your guests serve themselves.
