Apple, Carrot and Fruit Cake

Ingredients:

125g butter

½ cup raw sugar

2 medium sized eggs

1 teaspoon vanilla essence

2 Granny Smith apples, cored, peeled and coarsely grated

1 medium carrot, coarsely grated

1 cup dried mixed fruits (soaked overnight with 2 tablespoons rum or brandy - optional)

2 cups wholemeal self-raising flour (sifted with salt and spice)

pinch of salt

1 teaspoon mixed spice

1 cup low-fat milk

Cream cheese frosting or lemon icing (optional)

Method:

Prepare a large ring cake tin by greasing and flouring (or use a Teflon coated one sprayed lightly with cooking oil spray).

Pre-heat oven to 170C (fan forced oven).

In a large mixing bowl, beat butter and sugar until creamy.

Add eggs one at a time mixing well.

Add vanilla.

Add apples, carrot and dried fruits and mix well.

Add milk gradually, mixing well.

Pour cake mixture into prepared pan.

Bake for 40 minutes or until a wooden skewer inserted into cake comes out clean.

Cool on a cake rack.

Ice with cream cheese frosting or lemon icing or (optional).

Note: This mixture makes 2 bar cakes. Adjust cooking time.
