Apple Recipes for the Fall Season
You Will Need Two Apple Trees Growing Near Each Other to Have Successful Pollination
Apple Recipes:
Moist Apple Cake: 2 eggs; 1 1/2 cup fructose (or sugar); 1 1/2 cups vegetable oil; 1 Tbsp. lemon juice; 1 tsp. salt; 2 tsp. vanilla; 2 1/4 cups unbleached flour; 1/2 cups whole wheat flour; 1 1/4 tsp. baking soda; 2 cups shredded, tart apples; 1 cup chopped dates; 1 1/4 cups chopped nuts.
Beat eggs well; add fructose (sugar) and mix. Add oil, vanilla and salt. Combine flours with baking soda; stir into eggs mixture. Stir in apples, dates and nuts. Turn into a greased and floured bundt or tube pan and bake at 325 degrees for 1 hour. When cooled glaze the cake with hot apple juice concentrate for extra moist goodness.
Perfect Apple Pie: 8 cups peeled and thinly sliced tart apples; 3/4 cup fructose or sugar; 3 Tbsp. unbleached flour; 1 tsp. cinnamon; dash of nutmeg and salt; 3 Tbsp. butter; Pastry for a two crust pie.
Prepare apples; place in a large bowl and toss with fructose, flour, cinnamon, nutmeg and salt. Put in pastry shell and dot with butter. Adjust top crust, allowing slits for steam to escape; seal. Bake at 400 degrees for about 45-50 minutes or until done. Allow to stand at least 1 hour before cutting.
Apple Dumplings: 2 1/4 cup flour; 1/2 tsp. salt; 2/3 cup cold butter; 6-8 Tbsp. cold water; 6 tart apples; 1/3 cup fructose; 1/4 cup milk; 1/2 cup chopped dates; honey.
Make a pastry with first four ingredients; shape into 6 smooth balls. Roll each to a 6 inch square. Peel and core apples, enclosing each with pastry. Combine milk and fructose, and spoon into apple center. Stuff with dates and drizzle honey over the top. Bake at 450 degrees for 15 minutes, then at 350 degrees for 30 minutes or until done, basting every 15 minutes. Serve with whipped cream or ice cream.
Apple Brown Betty: 2 cups crunchy granola crumbs (blended fine); 3 Tbsp. melted butter; 5 to 6 large apples; 1/2 cup fructose; 1/2 tsp. lemon zest or peel; 1 Tbsp. lemon juice.
Stir granola crumbs with melted butter, making sure all the crumbs are moistened. Place 1/3 of the crumbs in the bottom of a buttered square baking dish. Peel and slice apples; place half of apples on granola. Mix fructose and lemon peel (or zest). Sprinkle half of mixture on apples; follow with crumbs and repeat procedure ending with crumbs. Mix lemon juice with 1/3 cup hot water and pour over all. Bake at 375 degrees for 30-35 minutes. Serve with sweetened whipped cream.
Chunky Applesauce: 2 quarts cored, peeled and quartered apples; 1 cup honey; 2 tsp. cinnamon; 1/4 tsp. nutmeg; dash of salt; 1 tsp. lemon juice.
Cook apples in a large Dutch oven and pour 1/2 cup honey in. Cook on low for 5 minutes, stirring frequently until juices form. Cover and cook on medium until tender (approximately 15 minutes). Mash apples with fork, potato masher or hand beater until desired consistency is reached. Season with additional honey, cinnamon, nutmeg, salt and lemon juice. Chill. This recipe can be multiplied to a bushel or more. When making that much substitute fructose for the last half cup of honey. It can be frozen or canned and processed in a water bath for 20 minutes.
Applesauce Brownies: 1 1/2 cups sugar; 2 eggs; 2 Tbsp. cocoa; 1/2 cup butter; 1/2 tsp. salt; 2 cups applesauce; 1 tsp.baking soda; 1/2 tsp. cinnamon; 2 cups flour; 2 Tbsp. sugar; 1 cup chocolate chips; 1 cup chopped nuts;
Cream sugar and butter; add eggs. Sift together cocoa, baking soda , cinnamon, salt and flour; add to sugar mixture alternately with applesauce. Pour into cookie sheet. Combine 2 tablespoons sugar, chocolate chips and nuts. Sprinkle over top. Bake at 350 degrees for 30 minutes.
Apple Bars: 2 cups sugar; 1/2 cup oil; 1 tsp. vanilla; 2 eggs; 4 cups thinly sliced apples; 2 cups flour; 1/2 cup nuts, chopped; 1 Tbsp. baking soda; 1 Tbsp. cinnamon. Streusel topping: 1/4 cup sugar; 1/4 cup brown sugar;
1 Tbsp. chopped nuts.
Mix sugar, oil, vanilla and eggs well by hand. Add apples, flour, nuts, baking soda and cinnamon. Spread on 10x15" jelly roll pan. Sprinkle with streusel topping. Bake at 350 degrees for 45 minutes.
Baked Apple Roll: 2 cups flour; 1 tsp. salt; 4 tsp. baking powder; 3 Tbsp. shortening; Milk; 3 Tbsp. sugar; 1/4 tsp. cinnamon; 2 sliced apples.
Combine flour, salt, baking powder, shortening and enough milk to make a soft dough. Mix like bread dough. Roll out 1/2 inch thick. Spread with 2 sliced apples. Sprinkle with 3 Tablespoons sugar and 1/4 teaspoon cinnamon. Roll up like jelly roll. Slice 1 inch thick; cover sauce, when put in baking pans. Syrup: 1/4 cup sugar; 3/4 cup water; 1/2 cup dark syrup; 1 Tbsp. butter; 3/4 Tbsp. cornstarch; dash of nutmeg. Combine ingredients and cook about 5 minutes; pour over apple slices. Bake at 350 degrees for 1 hour.
Sugarless Apple Pie: 6 to 8 Granny Smith apples; 1 (12 oz.) can frozen apple juice concentrate; 2 heaping Tbsp. cornstarch; 1 tsp. cinnamon; 1/2 tsp. nutmeg (optional); 1 recipe (2 crust) pie pastry.
Preheat oven to 350 degrees. Prepare your favorite pastry crust. Peel and thinly slice apples. Blend apple juice concentrate, cornstarch and spices in saucepan. Cook until thickened, stirring constantly, remove from heat. Add apples, mix well. Pour into pastry lined 9 inch pie plate. Top with remaining pastry; seal edges and cut vents. Bake 45 minutes or until crust is golden and apples are tender.
Applesauce Bread (Use all ingredients at room temperature): 2 pkgs. yeast; 4 1/2 - 5 cups bread flour; 1 1/2 cups flour; 1 tsp. salt; 8 Tablespoons sugar; 1 tsp. cinnamon; 1 1/3 cup warm applesauce; 2 Tbsp. butter; 1 cup warm apple juice; 1 cup grated fresh apple.
Put ingredients in bowl in order listed. Use dough hook to knead. The dough should clean the sides of the bowl. Knead 10 to 15 minutes. Cover and let rise until double in bulk. Take dough out of bowl. Shape into loaves. Grease two loaf pans. Place dough in pans and let rise until the dough is just above the rim of the pan. Preheat oven to 350 degrees. Bake loaves for approximately 35 minutes or until golden brown.
Taffy Apple Pie: 10 caramels, quartered; 1/3 cup flour; 3 1/2 cups apples, unpeeled, chopped; 2/3 cup caramel ice cream topping. 2 tsp. lemon juice; 1/3 cup chopped caramels; 1 baked pie shell.
Mix caramels and flour together. Add chopped apples, caramel topping and lemon juice. Mix all ingredients together. Put in pie shell. Sprinkle chopped caramel pieces on top. Bake at 375 degrees for 40 minutes, watching carefully until done.
Apple Crunch: 1 cup flour; 3/4 cup oats; 1 cup brown sugar; 1 tsp. cinnamon; 1/2 cup butter, melted; 4 cups sliced apples; 1 cup sugar; 2 Tbsp. cornstarch; 1 cup water; 1 tsp. vanilla.
Mix flour, oats, sugar, cinnamon and melted butter until crumbly. Press half into greased 8 or 9 inch baking dish. Cover with apples. Combine water, cornstarch, water and vanilla; cook until clear and thick. Pour over fruit. Top with remaining crumbs. Bake in a 350 degree oven for 1 hour.
Apple Pie Squares: 1 cup sugar; 1/3 cup butter, softened; 1 egg, beaten; 1 cup flour; 1 tsp,. baking soda; 1 tsp. cinnamon; 1 tsp. nutmeg; 1 tsp. lemon juice; 2 cups peeled and chopped apples; 1/2 cup raisins or chopped pecans; whipped cream (optional).
Cream sugar and butter until light and fluffy. Add egg, beating well. Combine dry ingredients, gradually adding all but 2 tablespoons to creamed mixture, beating well after each addition. Blend in lemon juice. Add reserved flour mixture and beat well. Stir in apples and raisins/pecans. Spoon evenly into a greased 9 inch baking pan. Bake at 350 degrees for 30-35 minutes or until lightly browned. Cut into squares and, if desired, top with whipped cream.
Applesauce Muffins: 1 1/2 cups oatmeal; 1 1/4 cup flour; 3/4 tsp. cinnamon; 1 tsp. baking powder; 3/4 tsp. baking soda; 1 cup applesauce; 1/2 cup milk; 1/2 cup brown sugar; 3 Tbsp. vegetable oil; 1 egg; 1/4 cup oatmeal; 1 Tbsp. brown sugar; 1/4 tsp. cinnamon; 1 Tbsp. margarine, melted.
Combine oatmeal, flour, cinnamon, baking powder and soda. Add applesauce, milk, brown sugar, oil and eggs. Mix just until dry ingredients are moistened. Fill muffin cups almost full. Combine last four ingredients and sprinkle evenly over batter. Bake at 400 degrees for 20-22 minutes. Makes about 12 muffins.
Apple Nut Pudding Cake: 1 cup sugar; 1/4 cup butter; 1 egg; 1 cup flour; 3 apples, peeled and diced; 1 tsp. soda; 1/2 tsp. cinnamon; 1/2 tsp. nutmeg; 1/2 cup nuts, chopped. Mix all cake ingredients together. Bake at 350 degrees for 30 minutes in a greased and floured 8x8" pan. For a flatter bar, bake in a 9x12" pan. Sauce Ingredients: 1/2 cup brown sugar; 1/2 cup white sugar; 1 tsp. vanilla; 1/4 cup butter; 1/2 cup cream; pinch of salt. Cook sauce ingredients over low heat a few minutes. Add 1 tsp. vanilla. When cool, add a pinch of soda.
Diabetic Apple Cake: 4 eggs; 1/2 cup shortening; 1 Tbsp. liquid sweetener; 1 Tbsp. vanilla; 2 cups flour; 1 tsp. baking soda; 1 tsp. salt; 4 raw grated apples; 1 cup raisins; 1 cup chopped nuts.
Beat first four ingredients together well. Add flour, salt and soda together. Fold in grated apples, then raisins and nuts. Bake at 350 degrees for 45 minutes.
Golden Apple Rhubarb Crunch: 3 cups peeled and sliced Golden Delicious apples; 2 cups diced rhubarb; 2 Tbsp. lemon juice; 1 cup flour; 1 cup brown sugar; 3/4 cup oatmeal; 1 tsp. cinnamon; 1/2 tsp. salt; 1/2 cup butter.
Combine apples and rhubarb in 2 quart glass baking dish. Sprinkle with lemon juice. Mix together flour, sugar, oatmeal, cinnamon and salt. Cut in butter until crumbly. Spoon over fruit. Cook in microwave on high setting for 10 to 12 minutes, until fruit is tender, rotating 3 times during cooking period. Serve with whipped cream or ice cream. In conventional oven, bake at 375 degrees for 30 minutes or until the fruit is tender.
Apple Pudding: 1/4 cup butter; 1 cup sugar; 1 egg; 1 cup flour; 1 tsp. baking soda; 1/2 tsp. cinnamon; 1/2 tsp. nutmeg; 1/4 tsp. salt; 1 1/2 cups grated apple.
In a bowl, cream together butter and sugar; add egg and mix well. In another bowl, combine dry ingredients, stir into creamed mixture then fold in apples. Pour into a lightly buttered 10x7 inch baking dish and bake at 350 degrees for 30 minutes. Serve warm with dollops of whipped topping or ice cream.
