1 tsp. cinnamon
2 Tbsp. lemon juice
3-4 c. butternut, acorn or other squash (peel, and slice like apple slices)
1 can apple pie filling (about 20 oz)
1/2 c. quick cooking oatmeal
6 Tbsp. butter, softened
1/2 c. flour

Mix 1/2 c. brown sugar, cinnamon, lemon juice, salt, pie filling and squash. Scoop into a 10 x 6 inch greased baking dish. Cover and bake for 30 minutes at 375 degrees. Combine, flour, oatmeal and butter until crumbly and sprinkle over the squash mixture. Bake uncovered for about 45 minutes more or until squash is tender.
