4 c sugar
5 1/2 pounds apricots
3 Tbsp. lemon juice
1 cup water.

Peel apricots. Cut in 1/2 and take out the pits. Put the apricots in your blender until fine. Mix apricots, lemon juice, and water. Bring them to a boil (make sure you stir often), add sugar and stir until the sugar is dissolved. Bring the mix back to a boil. Boil for 10 minutes. Scrape the scum off of the top of the apricots, and throw away. Pour Apricot syrup in pint size containers (glass or microwaveable storage containers). Let sit on the counter for 24 hours. After 24 hours you can freeze the containers.
