Arkansas' Rice Muffins

In our list of state muffins, Arkansas is featured with an unusual combination of rice and corn, two of the state's main farm products.

Arkansas' Rice Muffins

1 batch of Corn Muffin recipe

1 cup cooked rice (at room temperature)

2/3 cup finely chopped green onions

½ teaspoon hot pepper sauce

Prepare recipe as directed except decrease sugar to 2 Tablespoons and increase salt to ¾ teaspoon.

Add rice, green onions, and hot pepper sauce with liquid ingredients.

Makes 1 dozen. About 170 calories each.

    Wow- I always think of muffins as being sweet, but these sound like they could be a side dish.
