Artichoke Salad

This is by-far my favorite salad in the entire world. I love artichokes so to have a salad especially made for them is perfect for me.

This salad is great alone or with any pasta dish, with a side of cheese-garlic bread.

Ingredients:

1 head of Iceberg Lettuce

1/3 head of Romaine Lettuce

1 cup of Artichoke Hearts (NOTE: do not use marinated artichoke hearts)

1 cup of thinly sliced Red Onions

1 cup of diced Pimentos (completely drained)

1/3 cup Regina Wine Vinegar

1 teaspoon Salt

ΒΌ teaspoon black pepper

2/3 cup of freshly grated Parmigiano Cheese

Wash both lettuces; allow all the water to drain completely and then chill in the refrigerator. When lettuce is well chilled removed from refrigerator. Split the head of iceberg lettuce in half. Pull the heart of the lettuce out of both halves breaking it into small pieces. Do NOT use a knife on the lettuce. Separate the rest of the iceberg lettuce. (It will separate when it's tossed). Tear the romaine lettuce into three sections. Again, do NOT use a knife. Place both kinds of lettuce in a mixing bowl.

Drain artichoke hearts well; peel and slice red onion; drain and dice pimentos. Add to lettuce. This salad will serve 4-6 people.

Add olive oil, vinegar, salt, pepper...and toss! Add Parmigianino Cheese and voila! The perfect salad to accompany any pasta dish.
