Hot Middle Eastern Yogurt Soup

Ingredients

½ Ib Ground Beef

1 Medium Onion Minced

3 Leeks, Minced

1 Ib fresh Spinach Finely Chopped

½ Cup of Medium Grain Rice

1 Bunch of Parsley

1 tsp Salt

1 tsp Pepper (freshly ground if possible)

14 Oz Fresh Yogurt (or 1 ¼ Cups)

2 Cups Water

1 Bunch Cilantro

1 Can Garbanzo Beans

1 Can White Beans

Fried Onion Rings to Garnish

Directions

In a large saucepan fry the ground beef 10 - 12 minutes, using no oil, until the meat begins to brown. Stir in the onion, leeks, cooks for 5 minutes. Add all the additional ingredients; besides the Yogurt and heat the liquid to a boil. Cover and simmer for 20 - 25 minutes. In a small saucepan, heat a small amount of oil and fry onion rings. Stir in the yogurt and garnish with fried onion rings.
