24 asparagus spears, each about 6" long
4 Tbsp Dijon or your favorite mustard
3/4 cup grated Swiss cheese or blended white cheeses
4 Tblsp olive oil 1 clove garlic, minced
12 pieces of bread
Blanch asparagus spears for 2 minutes. Remove from water and set aside to drain and cool.
Stir minced garlic into olive oil and set aside.
With a rolling pin, flatten the bread slices. Trim crusts from each flattened slice, making each about 4" square.
Spread mustard on each square of bread. Sprinkle grated cheese over mustard.
Place 2 asparagus spears on each square of flat bread, diagonally. Roll the bread around the spears and seal with a bit of mustard.
Place asparagus bundles on a lightly greased or sprayed baking sheet, sealed corner facing up. Brush tops of bundles with garlic/oil.
Bake at 400 degrees for 15 minutes until golden brown and cheese is bubbly.
