Asparagus Bundles

Elegant and Simple Way to Prepare Asparagus Spears

Whether you use fresh asparagus or frozen spears, this is a delicious way to serve it.

24 asparagus spears, each about 6" long

4 Tbsp Dijon or your favorite mustard

3/4 cup grated Swiss cheese or blended white cheeses

4 Tblsp olive oil 1 clove garlic, minced

12 pieces of bread

Blanch asparagus spears for 2 minutes. Remove from water and set aside to drain and cool.

Stir minced garlic into olive oil and set aside.

With a rolling pin, flatten the bread slices. Trim crusts from each flattened slice, making each about 4" square.

Spread mustard on each square of bread. Sprinkle grated cheese over mustard.

Place 2 asparagus spears on each square of flat bread, diagonally. Roll the bread around the spears and seal with a bit of mustard.

Place asparagus bundles on a lightly greased or sprayed baking sheet, sealed corner facing up. Brush tops of bundles with garlic/oil.

Bake at 400 degrees for 15 minutes until golden brown and cheese is bubbly.

  • Asparagus is a good source of dietary fiber.
  • Use additional asparagus in each bundle if you have thinner spears.
Make the bundles ahead of time and refrigerate them. Keep covered with plastic wrap to prevent drying out. Brush on the garlic/oil just before baking.
