Ingredient list:
1 or 2 boxes of lasagna noodles (depending on how many you want to make at a time, there are approximately 16 noodles per box)
1 large Jar classic spaghetti sauce (or you can certainly use your own homemade)
8oz shredded mozzarella (for about 12-16 bundles depending on how much cheese you like)
1 large container ricotta cheese ( any type you like best)
grated Parmesan cheese
for filling option#1:
1 box frozen chopped spinach ( defrosted and all excess moisture removed)
for filling option#2:
Vegetables such as: zucchini, eggplant, tomato and carrots
sliced or shredded and sauteed in some olive oil and a couple cloves of garlic season with salt and pepper to taste cook until tender
for filling option#3:
Meats such as: cooked ground beef or sausage, pepperoni or salami, or cooked diced chicken
for filling option #4:
Cheeses such as : provolone, asiago , Parmesan or cheddar ( or a combination of whatever you prefer)
Preheat oven to 375 degrees
Cook lasagna noodles according to package directions . Drain and cool. Spread a thin layer of sauce in the bottom of a large casserole pan (or two). Lie noodles out on a clean , flat surface so that you can work with them individually. Spread 1 to 2 tablespoons ricotta cheese down the length of the noodle . Now apply either meat vegetable or cheese toppings over the ricotta (also a tablespoon or two). Now sprinkle shredded mozzarella over topping and finish with a few shakes of grated Parmesan cheese.
Now starting at one end roll the noodle up into a tight bundle and place in casserole dish. Follow this process until you have used up your ingredients or have made a sufficient amount . Make sure you alternate filling so as to make a little something for everyone. When the bundles have all been rolled and put in the casserole dish pour sauce over them and top with remaining mozzarella and a few shakes of Parmesan. If you want to be able to tell which one is which use different colored toothpicks to hold them together.
Place bundles in oven for 20-25 minutes or until hot and cheese is melted and browned. Remove and let sit for 5 minutes and enjoy with a loaf of crusty Italian bread and a tossed salad.
