Atkins Diet Bread Recipe

The popular Atkins diet is a low carbohydrate diet plan. In the beginning it can seem easy to cut out the carbs and eat simpler meals, however over time that can become boring and lead you to cheat or revert to old eating habits. No matter how dedicated you are to a diet plan your body and your taste buds crave variety! The best advice I have found is to consider it a life style or eating habit change instead of a diet. The hardest part for me to change was not eating bread. I love biscuits and rolls, not to mention wonderful honey oat sandwich bread, so I searched all over for a good Atkins diet bread recipe that I could eat with dinner in place of dinner rolls, and also that I could use for sandwiches. I ended up combining a few different recipes to create my favorite bread recipe ever, even when not practicing the Atkins diet I would love this bread. It is thick and flavorful, filling and healthy!

Atkins Diet Bread:

You can use whey protein instead of the soy protein in this recipe, or even use the Atkins bake mix instead of soy flour, this version had 0 carbs, which could be different if you use substitutions.

1/3 cup soy protein

1/3 cup soy flour

¾ teaspoon of baking powder

2 eggs

3 tablespoons of sour cream/ or cottage cheese your choice

1 ½ tablespoons of olive oil

1/2 cup shredded cheddar cheese

2 teaspoons oregano , you can also add other herbs and seasonings depending on your taste.

Heat oven to 375

Prepare a loaf pan by generously coating it with butter, this will give your bread a nice crust, and prevent sticking.

Combine all ingredients except ½ of the cheddar cheese in a mixing bowl, mix well.

Pour into the loaf pan and top with remaining cheddar cheese.

Bake for 25 minutes, or until a toothpick inserted in the middle of the loaf comes out clean.

This Atkins diet bread recipe is wonderful and extra loaves can be frozen so that you don't have to make bread every other day. For those of us who love bread the Atkins diet can be a real challenge, this recipe makes it much easier.
