Atkins Diet Dinner: Crock Pot French Onion Soup

Wow your guests and stick to your diet with this Atkins friendly and very tasty Crock Pot French Onion Soup. Easy and delicious this soup is made in the crockpot which gives you more time out of the kitchen and with your guests where you belong.

Ingredients:

3 sweet onions

1/2 cup unsalted butter

3 cups reduced sodium chicken broth

1/2 cup white wine

1 clove garlic (minced)

1 tsp sea salt

1 bay leaf

dash of ground black pepper

Directions:

In large nonstick skillet saute' onions until translucent

Add onions to crockpot

Add all other ingredients

Cover and cook on high for 5 hours

**if serving soup in oven proof bowls you may place bowls of soup on baking sheet, place one slice of Atkins Bakery Country white bread drizzled with reduced fat cheese on top and place under the broiler for 1-2 minutes**

This Crock Pot French Onion Soup is sure to become a favorite. I have served this before as an appetizer without the melted cheese on top and served a mushroom and cheddar frittata as the main course and they went together wonderfully. Enjoy!
