The Atkins Diet believes that a low carbohydrate higher fat diet is the way to weight loss. The diet has changed since the 70's from the all you can eat, high fat foods like bacon, eggs and cheese. My 1997 Diet Cookbook advocated a steak and cheese eggs breakfasts.

Buffalo Turkey Wings a great change from chicken wings. Good for football Sundays.

2-3 lbs turkey wings, 2 tbsp butter and ΒΌ cup of Buffalo wing sauce.

Brown wings 3 tbsp of olive oil. Bake wings at 350 degrees for 20 minutes. In saucepan, melt butter. Stir in Buffalo wing sauce. Brush wings with sauce. Bake for 10 more minutes. Turnover and baste with sauce. Bake 10 more minutes. Serve with blue cheese dressing and celery sticks.

Wraps are truly quick and easy for lunch or snacks. 6oz can of tuna or salmon in water/oil. 1tbs of olive oil mayonnaise. 3 - Romaine lettuce leaves.

Mix fish with mayonnaise, salt and pepper to taste. Add chopped celery in my salad, 2 stalks. Spoon mixture into leaves and roll. Kids really like these for after school snacks.

A nice dinner is the roast beef fillet. Buy a beef tenderloin and slice 4-6oz pieces. Buying the whole tenderloin is cheaper. The ingredients are: 1 small scallion, 2 tablespoons butter, softened, 2 tablespoons crumbled blue cheese, 1/4 teaspoon salt, divided, 1/4 teaspoon freshly ground pepper, divided, slices pork or turkey bacon , 2 teaspoons olive oil, and 1/2 pound white mushrooms.

Thinly slice white portion of scallion. Make the butter: Finely chop green portion of scallion, and place in a small bowl. Add margarine and cheese; mix.

Sprinkle each beef filet with 1/8 teaspoon salt and pepper. Wrap 1 slice of bacon around side of each filet, and secure with toothpicks. In a nonstick skillet, heat oil over medium heat. Add filets to skillet, and cook on all sides, until brown. Transfer to a baking sheet. Roast about 10 minutes.

Heat skillet, add mushrooms, scallion and 1/8 teaspoon salt and pepper. Cook until mushrooms are tender. Serve beef with mushrooms and blue cheese butter.

Mozzarella Cheese with Spinach and Beefsteak Tomatoes

1 cup romaine lettuce

1/2 cup spinach
fresh basil chopped
2 tomatoes sliced
3 tbsp olive oil
1 tbsp balsamic vinegar
1/4 pound Mozzarella cheese sliced

Serve cheese on top of salad with sliced tomatoes, sprinkled with basil. Drizzle with oil and vinegar.
