I personally would like to share with you six recipes from the Atkins Diet which is to die for and i'm sure you will love it too.
Mexican Shrimp- Carbs Per Serving :16
18 ounce shrimp-uncooked.peeled
2 cloves garlic-minced
1 tablespoon oil
1/2 cup salsa
1/4 cup chopped fresh cilantro
1 cup shredded cheddar cheese
Cook the shrimp and garlic in oil for about four mintues. Stir in the salsa and remove the shrimp from heat. Stir in cilantro. Divide into four overproof bowls and sprinkle evenly with cheese. Place under broiler for 2-3 minutes or untill cheese is brown and bubbly.
Cheese Nachos
1 controlled carb tortilla
shredded cheese( use hard cheese if possible because most have very little to no carbs at all)
pinch of salt to taste
Cut the tortilla in 8 parts as you would to a pizza. Deep fry untill golden brown, drain and add salt. Arrange on baking dish add cheese and bake 2-3 minutes untill cheese is melted. Add any low carb topping and enjoy.
Chicken Wings
3lbs chicken wings
6 T. hot sauce
1 stick butter
2qts cooking oil
salt to taste
Wings- Cut whole wings at joint and discard tips. Sprinkle wings with seasoned salt of choice. Deep fry untill golden brown and crispy. Drain on paper towels.
Sauce- Combine melted butter and hot sauce in large bowel, and mix well. Add wings and coat evenly. Serve with bleu cheese and celery.
Rotel Chicken
6 c chicken- cooked, cubed
1 pk Vermicelli spaghetti (7oz)
2 large bell peppers-chopped
2 celery stalks-chopped
1 c mushroom-sliced
1/2 c butter
2 can rotel tomatoe-diced (10 oz ea)
2 tablespoon worcestershire sauce
1lb chedder cheese- grated
Cook and season the chicken. Sace 1-1/2 quarts of the chicken broth and cook the spaghetti in the broth, drain but don't rinse. In heavy pan saute pepper, onion, celery, and mushrooms in butter. Add tomatoes and simmer for about 15 minutes to let the flavors blend. Add spaghetti and cook untill cheese melts and everything is bubbly.
Baked Spaghetti
2 cups cooked spaghetti squash
1lb lean ground beef- cooked and drained
2 cups fresh mushrooms
1 small onion-diced
2 cups of your favorite low carb spaghetti sauce or canned tomatoes
2 cups grated cheese
1 tablespoon butter
Saute the mushrooms and onion in butter. Combine all ingredients and top with cheese. Bake at 350 for atleast 30mins.
Sloppy Joes
minced beef- as much as you want since it has zero carbs
1 can chopped tomatoes
1 1/2 tubes very low carb tomato paste
100 ml v8 juice
minced garlic to taste
olive oil
water -100 ml
250 grams chopped mushrooms
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon paprika
pinch of salt and pepper
Brown the minced beef in one pan. In another large pan fry the garlic in the olive oil. Then add the beef, chopped tomatoes, tomato paste, V8 juice,water,mushrooms,and spices. Bring to boil then simmer for an hour.
