Atkins-Friendly Hot Spinach Dip

One of the things I used to miss most on the Atkins Diet was those great hot spinach based dips you'd get at restaurants. There's just something about the combination of hot spinach dip and crunchy tortilla chips that satisfies like nothing else. So I decided to try to replicate that flavor in an Atkins friendly format. I think you'll find that this recipe is filling enough to use as a meal and will satisfy your craving for chips and dip without sending you on a one-way trip back to Induction.

Ingredients:

1 lb. ground beef or sausage

2 cans of spinach, well drained

1 8 oz. package of cream cheese, softened

1 can of black olives

1 8 oz package of fresh mushrooms

2 tbsp. salt

2 tbsp. chili powder

2 tsp. curry powder

1 tsp. hot sauce

1 tbsp. sesame oil

Directions:

Heat the oil in a skillet

Combine meat and 1 tbsp. of the chili powder. Brown until 3/4 of the way done.

Add mushrooms, spinach, olives, and the rest of the spices. Cook for 2 minutes

Add the softened cream cheese and the hot sauce. Mix thoroughly.

Cook for 5 minutes on medium heat, stirring often, until the liquid cooks out.

Use spicy pork rinds in place of the tortilla chips, dip and enjoy!

Makes 6 servings at 5 net carbs per serving
