Aunt Tilly's Easy Cheesy New Years Eve Dip

Cat von Hassel-Davies
Are you planning a New Years Eve party and you are looking for something quick and easy to make? How about a dip that you can make ahead and put in the refrigerator? When you are ready, you will just need to place it in a bowl, add garnish, chips and/or crackers. Well then, our Aunt Tilly's Easy Cheesy Holiday Dip should be in your recipe box. Even though it is called Aunt Tilly's, my husband created this dip naming it after one of our Yorkshire Terriers, and his favorite, Chantilly Lace. The dip is really scrumptious and it is the most requested recipe at all our parties. You can also make it spicier by changing the horseradish or Tabasco® Sauce ratio.

Aunt Tilly's Easy Cheesy Holiday Dip

16 ounces Pimento Cheese Spread

2 cups of Shredded Mozzarella Cheese

4 drops of Tabasco® Sauce

2 1/2 TBSP Horseradish

Put pimento cheese spread into a bowl and add the mozzarella cheese and mix all together. Add the Tabasco® Sauce, taste to see if it is to your liking (you might want to add a little more later). Add the horseradish sauce and again taste to see if you need more spiciness. The tasting also serves as a guideline for you to see if you prefer the taste of the Tabasco® Sauce over the horseradish or visa versa. Add more horseradish sauce and/or Tabasco® Sauce to your taste. Sometimes I like to switch it up a bit and purchase a flavored Tabasco® Sauce such as Tabasco® brand Habanero Sauce or their Garlic Pepper Sauce.

Place in a decorative bowl and garnish with parsley. Serve with your choice of crackers; I like Breton because of their creamy buttery flavor.

There are many other ways you can serve this dip; it is wonderful on sandwiches in place of your regular cheese. Another delicious alternative way to serve the Aunt Tilly's Easy Cheesy Holiday Dip is to slice some French bread and place the slices on a cookie sheet, place under a broiler until just brown. Take out of broiler, place cheese spread on bread slices and place back into broiler until brown and bubbly. You can also take a slice of bacon and cut it up into three or four pieces and place this on top of the cheese spread and then broil until bacon is crisp. Instead of or in addition to the bacon you can add a slice of tomato, then the bacon and place in the broiler.
