Authentic Spanish Omelet

SPAM Omelet Puerto Rican Style

Things You'll Need:

* 5 X-Large Eggs

* 1/2 can of SPAM diced

* 1/4 cup chopped green bell pepper

* 1/4 cup chopped onion

* 2 to 3 sprigs of finely chopped FRESH cilantro

* 1 packet of GOYA SAZON seasoning (Con Culantro y Achiote is my preference)

* 1 minced clove of fresh garlic

* 1-2 Tbsp of Virgin olive oil (suit to taste)

* 1-2 slice of Amercican Cheese

* Salt & Pepper to taste

* Toast for breakfast white rice for dinner1/4 cup freshly diced tomato

Step 1 - Heat non-stick skillet on medium heat. Add olive oil heat until medium hot.

Step 2 - Add onions, green pepper and tomato to pan - fry until onions are clear (about 1-2 minutes) add garlic and cilantro mix for about 30 seconds.

Step 3 - Scramble eggs in separate bowl - do not over beat - add 1 packet of Sazon, salt and pepper combine until mixture becomes a consistent bright orange (about 30 seconds)

Step 4 - Scrape mixture in pan to the side and gently add egg mixture to pan. Scramble eggs with mixture once bottom appears set. Add cheese to pan - tear cheese into pieces and spread about omelet.

Step 5 - Mix once more. Remove from heat. Serve atop toast/english muffin for breakfast, crackers for brunch or white rice for dinner. Enjoy!

* Fresh cilantro, SPAM and Sazon are the key ingredients to this recipe.

* 1/2 teaspoon of garlic powder can be substituted for fresh garlic.

* Season with salt/pepper lightly.

* Great for breakfast - lunch - brunch or dinner!

* * This dish is a sure hit and authentic to the Puerto Rican/American palate.

* Careful with the seasoning - light hand recommended. You can always add more later.

This dish is easy to tune to your own tastes provided the three key ingredients remain!
