"Beginning with small acreage in 1988, consumer interest in "organic" sweet potatoes has grown the point that A.V. Thomas Produce is now the largest grower-packer-shipper of organic sweet potatoes in the United States." This quote was taken from the front page of A.V. Thomas produce, and while it's not doubted that such a claim can be staked by A.V. Thomas, it's somewhat surprising. You see, the state producing the most yams, or sweet potatoes, is Louisiana. Note: The Louisiana Yam is actually a sweet potato. What's not surprising about the claim is the organic qualifier to describe how the yams were grown and where they came from, California, go hand-in-hand. California produces a lot of organic produce. Too, A.V. Thomas does say it's the largest "grower-packer-shipper of organic yams." The combination of taking care of all three jobs eliminates a number of exclusive growers of yams. Now to the matter at hand-a review of this particular Jewel yam.

While all sorts of preparations are done with yams, most persons in the U. S. bake yams with butter and cinnamon and perhaps marshmallow for added flavor to the yam. The yams used for this review simply were baked and had butter and Vietnamese cinnamon added to them after they finished baking. These yams are top notch! Not too starchy, nor were they dry. While baking yams for too long will certainly dry them out, yams can be naturally a bit dryer than sweet potatoes. Again, not the case with A/V. Thomas Produce Natural Beauty Organic Jewel Yams.

Too, the shape of them wasn't as cylindrical as what you usually expect with yams. If it weren't for the pointy ends on them, they'd look like sweet potatoes, as long as you hadn't already touched the skin. The skin between a yam and a sweet potato is different, too. Generally, yam skin is harder than sweet potato skin.

Thomas Produce Jewel Yams, or any of its sweet potatoes and yams. They take special care in not bruising them when getting them from their farm to your hands.

    I always love everything you happen to write... Unfortunately, I do not like sweet potatoes at all.. YUK !!!!
