Bacon Wrapped Crab Stuffed Shrimp

16-20 jumbo shrimp, peeled, deveined, and butter-flied

1 lb. sliced bacon strips, cut in half

Filling:
1/4 cup cracker crumbs (Club or saltines), finely crushed
3 T. mayonnaise
1 T. chopped fresh parsley
1 t. Worcestershire sauce
1 t. Old Bay seasoning
1 t. fresh lemon juice
8 oz. Crabmeat

Mix together the filling ingredients in a small bold.

Lay bacon slices between two paper towels and place on a microwave safe dish. Microwave on High for five minutes or until half cooked (time may vary according to microwave wattage).

Butterfly the peeled and deveined shrimp and toss with lime juice.

Mold stuffing into the shrimp.

Wrap shrimp roll with one-half strip of bacon; secure with skewers.

Grill over medium heat until shrimp turns pink and bacon is done, about 2 to 4 minutes per side.

My love of cooking began early on and expanded (along with my waist) as I grew older. I have a weekly newsletter/recipe that has well over 100 people on the mailing list. Hopefully my good sense of humor...  View profile
