Baked Herbed Dijon Salmon

Shopping list :

Salmon fillets - I prefer Atlantic salmon it is less oily

Olive oil

Dijon mustard - I prefer any Dijon with no fat

1 lemon per two fillets

Fresh herbs - Dill and thyme

Cooking directions :

Pre heat oven to 350 degrees F

Rinse salmon in fresh water and pat dry

Place a sheet of foil on a baking sheet and cover with thin coating of olive oil

Place salmon skin side down on baking sheet

Squeeze the juice of 1/2 a lemon on and around each fillet

Salt and pepper to taste

Sprinkle fillets with a teaspoon of oil per fillet

Prepare about 2 tablespoons of mustard per fillet and both fresh herbs to taste in separate bowl

Spread mustard / herb mixture on fillets

Bake salmon on middle oven rack for approx 20 mins / for color : broil on top rack for 3 mins prior to serving

When salmon starts to showing the slightest white liquid on sides of fillets it is done

Serving :

Serve with fresh sliced lemon and your choice of side

Rice goes well with this dish and any crunchy green vegetable like green beans or broccoli

Wine suggestion : a white wine like a pinot grigio goes well with this dish complimenting the light flavors and settling the palate from the sharp mustard flavor
