Baked Potato Salad

A New Twist on an Old Favorite

I don't know about you, but one of the best parts of summer for me is going to bar-be-ques. Lots of good food and fun. Part of the fun of bar-be-ques is all the different salads you find at different bar-be-ques. You can't go wrong with a classic potato salad, but sometimes you want something a bit different. This recipe is for Baked Potato Salad and it's a tasty treat.

For this recipe, you'll need:

+Four baked potatoes, in the skin, cold
+Five crisply cooked pieces of bacon
+A quarter of an onion, diced
+One small tub of sour cream
+Cheddar (or any other cheese of your choice)
+Fresh chives

Cut the baked potatoes up into bite sized pieces, add the onions and crumble the bacon over the top of the potatoes and onions. Mix well, grate cheese to taste over that mixture and stir well. Add sour cream to the potato mix until the salad is creamy and held together. Place in a serving bowl and garnish with fresh chives and more crumbled bacon if you'd like.

This recipe, like all others, are merely a starting point. At some point, I am planning on making this salad with ham and broccoli in addition to the potatoes, onions, and bacon. Enjoy!
