One bag fresh spinach
Feta Cheese
Four large boneless skinless chicken breasts
One third cup balsamic vinegar
One tsp. brown sugar
Two large red bell peppers
One medium/large red onion
Olive oil, one and a half tablespoons
Two tablespoons of minced garlic
Cut chicken breasts into quarter inch chunks season with salt, pepper and garlic to your liking. Slice onion and red pepper thinly and set aside, heat oven to two hundred degrees. Heat olive oil in large skillet over medium-high heat, add chicken and stir continuously until outside is white and slightly browned. Turn heat down to medium-low and cook chicken all the way through. Remove chicken from skillet placing in an oven proof bowl and place in warmed oven. In same skillet add red bell pepper, minced garlic and onion and sauté until veggies just start to soften. Remove skillet from heat and mix in spinach leaves until barely warmed and leaves are slightly wilted. Place mixture in or on large serving dish, pull chicken from oven and scatter over top. Return skillet to heat, add balsamic vinegar and brown sugar, mix with fork and let simmer for forty five-sixty seconds. While glaze is cooking sprinkle feta cheese over top of chicken, when glaze is done drizzle over entire salad.
This zestful dish is not only flavorsome it is also provides many nutritional benefits which include vitamin c, thiamine, vitamin b6, beta carotene and folic acid that are found in bell peppers. Red bell peppers also contain lycopene which is a carotene that helps protect against cancer and heart disease. Onions contain a number of sulfides which are similar to those found in garlic which may help lower blood pressure. Spinach has many nutritional benefits starting with the fact that they contain chiline and inositol which help to prevent atherosclerosis. Spinach also helps to stabilize blood sugar and is loaded with flavonoid that functions as an antioxidant and anti-cancer agent. Spinach also contains carotenoid which helps fight cancer. It is also rich in vitamins A&C and a good source of vitamin K which helps in forming the substance that your body uses to clot blood. There is good and bad when it comes to the feta the good is it is a superior source of riboflavin, protein, calcium, phosphorus and Vitamin B12. The bad: it has a high cholesterol and sodium content and it comes with high saturated fat.
