Ingredients:
3 ripe bananas, mashed
1/2 C honey
1 slightly beaten egg
1/3 C melted butter
1 1/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 C whole wheat flour
1/2 C chopped walnuts
Directions:
In a small bowl, mix the mashed banana, honey, egg and melted butter together; set aside. In a large bowl, mix together baking soda, baking powder, walnuts, salt and flour. Add the wet ingredients to the dry and stir just until blended. Allow mixture to sit for a couple of minutes before spooning into baking cups. Once it's set, spray foil baking cups with Pam spray and then fill the cups 1/2 to 2/3rds full with the muffin mix. Bake for 25-30 minutes at 325.
Yield: 12 muffins, about 200 calories each.
