Banana Orange Muffins

A Tasty Easy to Make Muffin

This is a good recipe for a muffin which is not too sweet but still has a lot of flavor. I love to make these muffins for when I have to go to a meeting or study group, since they go so well with a cup of coffee.

For the orange juice I used four large oranges pealed, cleaned, and cut into pieces. Then I place the pieces in a blender and process on high until they are liquefied. I then added a small part of the orange peel and grate that right into the juice mixture to save the mess of grating it in separately.

Bowl # one

5 large eggs

½ cup unsalted butter

3/4 cup fresh orange juice with pulp

1 tbsp. Vanilla extract

1 tbsp. Grated Orange rind

1 cup mashed overripe bananas

Combine all ingredients and mix very well.

Bowl #two

3 ½ cups flour

½ tsp. baking soda

2 tbsp. Baking Powder

1 cup packed brown sugar

1 ½ tsp. nutmeg

1 ½ tsp. All spice

2 cups chopped walnuts

Combine all ingredients and mix well.

Pour the dry mixture into the liquid mixture and stir until they are blended. Pour batter into greased muffin tins.

Bake at 400 degrees for about twenty minutes or until done, depending on size of muffin tins.
