Barbecue or Grill Recipes for your next cook-out

Every spring and summer, I frantically search for new recipes for the grill. I just came across a few new ones for you to try. I think you will be very pleased.

Orange Barbecue Chicken

3 teaspoons corn starch

½ oz chili pepper

8 oz tomato sauce

1/3 cup corn syrup

1/4 cup water

2 tablespoons vinegar

2 tablespoons orange liqueur

3 pound whole chicken

First, you must make the sauce. In saucepan combine cornstarch and chili powder. Then stir in tomato sauce, syrup, water, vinegar and liqueur. Simmer 30 minutes.

Clean chicken and salt inside. Mount chicken on a turning spit rod. Put over gr4ill and turn for about 1 1 /2 hours. Be sure to marinate with sauce the last 20 minutes several times. Serve the rest with the chicken.

Your guests will love this one.

Grilled Mexican Beef Tortillas

1 lbs flank steak

½ cup spicy mustard

10 tortillas

2 tomatoes

1 onion

4 oz green chilies

Spread mustard over both sides of the steak. Cover and marinate overnight. Grill steak about 10 minutes on each side. Cut steak in strips. Put in tortillas and add the condiments of your choice.

Bacon Stuffed Burgers

4 slices of bacon

¼ cup celery, finely diced

1 onion, diced

4 oz mushroom, diced

2 eggs

½ cup Italian Bread Crumbs

2 tablespoons milk

1 tablespoon Worcestershire sauce

2 lbs of ground beef

Salt and pepper to taste

Cook bacon until crisp and let drain over paper towel. Cook celery, 1/3 of onion and mushroom in remaining bacon grease.

Stir together eggs, bread crumbs, 2/3 of onion, milk, Worcestershire sauce and salt and pepper. Add ground beef and mix well. Make thin long patty and add layer of stuffing mix. Add second patty.

It is best to cook this on a wire grill so it does not fall apart. Cook about 10-15 minutes per side.

This is one thick juicy, tasty burger.

Hickory Barbecue Ribs

1 cup catsup

½ onion, diced

1/3 cup brown sugar

3 tablespoons mustard

2 tablespoons wine vinegar

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

4 or 5 dashes hot pepper sauce

4 lbs spare ribs

Combine catsup, onion, brown sugar, mustard, wine vinegar, Worcestershire sauce, soy sauce and hot pepper sauce.

Grill ribs over hickory chips if you like a smoky flavor. Cook ribs on low to medium about 1 hour. Brush with sauce the last 15 minutes. Serve with remaining sauce. This is finger licking good.

Smoked Stuffed Chicken

1 potato, chopped and boiled

1 chicken bouillon cube

¼ cup water

2 slices bacon

½ cup diced celery

½ cup diced onion

2 slices wheat bread cut in cubes

1 teaspoon Italian seasoning

Salt and pepper to taste

3-4 lbs roasting chicken

In mixer blend potato, bouillon cube, water, salt and pepper.

Cook bacon until crisp and diced. Add celery and onion and cook until soft. Stir in potato mixture, bread crumbs and seasoning.

Rinse and salt chicken. Stuff chicken with mixture. Secure tightly with metal rod to keep stuffing in. Cook chicken on spit rod, but do not spin, for 2- 2 ½ hours. Brush with sauce the last 30 minutes. If you like the hickory flavor, you can use hickory chips.

These are sure to be a hit with family and friends.
