Beach Party Barbecue Meal

As summertime rolls around, we look forward to the beach and barbecues. You can enjoy a great day at the beach and serve a full satisfying meal. All you need is a little at home prep time, a charcoal grill or portable gas grill, a cooler and you are all set. Enjoy my recipes for your summertime fun.

Tropical Chicken Ke-bobs

12 pieces of boneless chicken cut into cubes
12 quarters of red onion
12 quarters of yellow pepper
12 quarters of orange pepper
12 pieces of pineapple (fresh pineapple works best, you can use canned pineapple chunks but increase to 24 pieces)
12 maraschino cherries
12 cherry tomatoes
1 bottle of Caribbean Jerk flavored Marinade
4 skewers
(4 servings)

Marinate the chicken over night

In the morning assemble your ke-bobs alternating the above ingredients on the skewer use 3 pieces of each ingredient (6 if you are using the pineapple chunks instead of fresh)

Turn frequently on your grill and cook until chicken is done

You can transport and store the ke-bobs in a disposable aluminum foil pan with lid. You may want to wrap plastic wrap and or aluminum foil around the pan as well to prevent spillage in your cooler.

Tri-Color Macaroni Salad

1 pound tri-color rotini pasta
ΒΌ cup low fat mayonnaise
a handful of cherry or grape tomatoes
1 radish cut up
1/2 cucumber sliced
shredded carrots

Cook macaroni, drain and let cool
Mix the mayonnaise in well and toss in the other ingredients
Store in an airtight container and keep cold in your refrigerataor until moving it to your cooler

Easy S'mores

Graham Crackers
Large Marshmallows
Can of Milk Chocolate frosting

Spread chocolate frosting on the graham crackers in place of a piece of chocolate

Toast marshmallow and place between two graham crackers with frosting
