Recipes that Will Make Your Mom Melt

Mother's day is just around the corner and many of us rush out to get "Mom" that perfect gift that only a child could give their mother. Why not try something different this year by making her Mother's Day dinner just a little bit sweeter with some sweet mother's day desserts. Mother's Day only comes once a year and mother's are a very important part of our lives. For those of you whose mother's may not be present, find someone you can celebrate Mother's Day with such as a grandmother, an aunt, or even a friend who is a mother that you would like to honor. Some of you think of your father as your mother also, and your father will enjoy these treats just as much as anyone else. There are many ways to decorate and prepare for this important holiday and today we are going to learn how to create some delicious treats fit for only the best. Here are some recipes that are easy and fun for the children to help with as well. After all, taste testers are a key part of good cooking.

"MOM" Cake

Ingredients:
1 (10 3/4 ounce) pound cake
1 (3 1/8 ounce) box of instant pudding (any flavor)
1 cup of whipped topping
Fruit of your choice (for topping)
Chilled chocolate syrup
Trimmings of your choice.

Directions:
1. Slice the pound cake into several slices about 1 inch thick.
2. Prepare the pudding according to the direction on the package.
3. Mix the prepared pudding with the whipped topping.
4. Chop up the fruit you have chosen.
5. Layer the cake, fruit , and a little less than half of the pudding mixture in a loaf pan.
6. Top the cake with the remaining pudding.
7. Chill in the refrigerator for 2 hours.
8. When chilled, decorate with trimmings of your choice. (Example: strawberries, nuts, candy, etc...)
9. Squeeze on a greeting with the chilled chocolate syrup.
10. Serve mom a sweet treat just for her.

Easy Chocolate Truffles

Ingredients:
1/4 cup heavy cream
8 oz. bittersweet chocolate, cut in small pieces
6 tbsp. unsalted butter, softened
6 pecan Sandie's or 1/4 cup fine cocoa

Directions
1. In a heavy, small saucepan, bring the cream to a boil.
2. Remove from the heat and stir in the chocolate and butter.
3. If necessary return to heat for 30 seconds while stirring until chocolate is completely melted and well blended.
4. Pour chocolate mixture in a shallow glass or plastic container and refrigerate for about 2 hours.
5. Process pecan Sandie's in food processor or blender to make very fine crumbs, and scatter them on a pie plate.
6. Line a glass, airtight container with waxed paper.
7. Dip a melon baller in warm water and scrape it across the surface of the cold truffle mixture to form a 1/2-inch ball.
8. Drop the ball into the crumbs and repeat with the rest of the mixture.
9. Roll the chocolate balls around the crumbs until well coated.
10. Transfer the truffles to the prepared container and separate layers with additional wax paper.
11. Cover tightly and keep refrigerated.

Makes around 35 small truffles.

Strawberry Pineapple Salad

Ingredients:
3 tablespoons honey
2 cups strawberries, hulled and crushed
1- 8 ounce package cream cheese, softened
1 cup crushed pineapple, drained

Directions:
1. In a bowl, mix cream cheese and honey.
2. Add strawberries and pineapple and blend well.
3. Pour into a freezer tray and freeze for 2 hours.
4. Cut into 4 portions.
5. Serve on lettuce leaves and garnish with strawberry slices, if desired.

Serves 4

Easy Pie

Ingredients:
1 cup sugar
1 cup flour
1 cup milk
1 stick melted butter
1 can fruit of your choice, drained

Directions:
1. Preheat the oven to 450 degrees.
2. In a bowl, combine sugar, flour and milk.
3. Pour mixture over butter, stir and press into pie pan.
4. Add fruit.
5. Cook in bottom of oven until brown.

While there are thousands of different recipes that you could come up with for Mother's Day, I thought maybe you could use some of these ideas if your in a hurry and want to make dinner a special celebration for your mother.

    This is an excellent article that has many great recipes for Mother's Day. I may just implement these recipes into our standard desserts each night...lol. They sound so good! Thanks for sharing the idea and the recipes with us. Five stars all the way!
