Ingredients

Serves 8
12 Eggland's Best large eggs, (to cut cholesterol use 8 whole eggs and 4 egg whites)
4 cups cooked rice
1 1/2 pounds breakfast sausage
4-6 slices bread
1/4 cup cheese
1 teaspoon salt
1/4 cup milk (a little milk will give the eggs a nice yellow color)
1 tablespoon oil
1 teaspoon butter
Garnish
1/2 pound bacon
2-3 springs fresh parsley
1/4 teaspoon pepper

Prep oven
Preheat oven to 350 degrees

Prep the pan
Oil on all sides and bottom, a 9-inch round (or square) cassrole dish or baking pan.

Arrange bread to cover bottom of pan.

Here's the filling...
Place rice in pan, spread evenly

Now, cook the meat
Cook sausage and bacon according to package directions. Drain on paper towel.

More filling...
Cut sausage in 1/4-inch slices. Arrange on top rice.

Prep the eggs
In a large bowl crack and scramble eggs. Add salt, milk and cheese. Mix lightly.

Last of the filling
Pour egg mixture over rice and sausage covering completely.

Bake
Bake for 45-55 minutes or until done (knife stuck in center of pan should come out relatively clean.)

Garnish
Crumble bacon.

Make it look pretty
Sprinkle a dash of pepper on top, add crumbled bacon and garnish with a sprig of parsley.

Slice to serve.

Hot tea served with lemon slices, fresh fruit, fruit juice, toast, creamed spinach (or any breakfast vegetable) and pancakes .
