Beef Crock Pot Recipes

Buffet Beef in Beer recipe
1 (12 ounce) can beer
1 envelope onion soup mix
1 envelope brown gravy mix
1 (2 1/2 to 3 pound) round steak
1/3 cup all-purpose flour

In crock pot, mix well the beer, onion soup mix and brown gravy mix.

Cut beef into 1 1/2-inch cubes, then shake with flour in a plastic bag. Empty bag contents into crock pot. Gently stir to coat meat with liquid. Cover and cook on LOW (180 to 200 degrees) for about 8 hours.

Garnish with dill weed. Serve with hard rolls.

Makes 10 to 12 servings.

Beef Roast with Sour Cream Gravy recipe
1 (3 pound) chuck or pot roast
2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon oil
1/4 cup water
1 tablespoon vinegar
1 teaspoon dill weed
5 or 6 small potatoes
5 or 6 carrots
1/2 teaspoon salt
1 large onion
1 tablespoon all-purpose flour
1 cup sour cream
1 teaspoon dill seed

Coat roast with 2 tablespoons flour, salt and pepper. Brown in oil in skillet. Put roast in crock pot. Add water and vinegar. Sprinkle 1 teaspoon dill weed over meat, then add potatoes, carrots, onion and salt. Cook on LOW for 10 to 12 hours or on HIGH for 6 hours.

To make gravy, pour off 3 tablespoons drippings, add 1 tablespoon flour and heat. Measure rest of drippings, and add water to make 1 cup. Add to flour mixture and heat for 1 minute, stirring constantly. Add sour cream and 1 teaspoon dill weed. Heat to boiling.

Coca-Cola Steak recipe

1 1/2 pound boneless round steak, in 4 pieces
1 tablespoon flour
1 cup onion, chopped
1/2 teaspoon salt
1/8 teaspoon garlic salt
1/8 teaspoon pepper
1/4 cup ketchup
1/2 cup Coca Cola

Dredge steak in flour and add to crock pot with other ingredients. Cover and cook 4 to 5 hours on HIGH, or 8 to 10 hours on LOW.

Cheese Cracker Meat Loaf recipe
17 round cheese crackers
1 small onion, finely chopped
2 tablespoons green bell pepper, minced
1/4 cup chili sauce
1/2 cup milk
2 eggs, slightly beaten
3/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 pounds lean ground beef

Crush crackers with rolling pin or blender until crumbled.

In mixing bowl, combine crumbs with onion, green pepper, chili sauce, milk, eggs, salt and pepper. Mix in ground beef. Form into a 6- or 7-inch round loaf. Place in crock pot. Cover and cook on LOW for 6 to 8 hours or until done.

Drunken Garlic Pot Roast recipe
1 (2 1/2 pound) boneless beef chuck roast, trimmed of fat
2 tablespoons vegetable oil, divided
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium onions, thinly sliced
24 cloves garlic, minced (about 4 tablespoon)
2 beef bouillon cubes
1/2 cup hot water
1 cup lager beer
3 tablespoons brown sugar
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
Cornstarch dissolved in water, for gravy

In a large skillet, heat 1 tablespoon of the oil and brown roast on both sides, seasoning with salt and pepper; remove to a platter and keep warm.

Add the remaining tablespoon oil to the pan and add the onions. Cook until they just start to wilt, then add the garlic. Cook until the onions are tender, a few minutes more.

Add the bouillon cubes to the hot water and stir to dissolve; add to the skillet along with the beer, brown sugar and vinegar; stir to mix well. Pour mixture into a crock pot. Place roast on top of liquid, cutting into pieces if it doesn't lay flat. Cook on LOW for 7 to 8 hours.

Remove meat from crock pot and pour liquid into a saucepan; heat to a boil, and mix a slurry out of the cornstarch and water; thicken pan liquid with slurry to make a gravy.

Serve gravy over meat with potatoes or noodles

Beef and Potato Casserole recipe
1 pound lean ground beef
1 (5 to 6 ounce) package scalloped potatoes
1 (16 ounce) can tomatoes
1 (10 ounce) can pizza sauce
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon oregano leaves
1/4 teaspoon basil leaves
1/8 teaspoon garlic powder
1 cup mozzarella cheese, cut into small cubes
1/4 cup grated Parmesan cheese

In skillet, brown ground beef, drain. In crock pot, combine beef with dry sauce mix from package of scalloped potatoes, tomatoes, pizza sauce, water, salt, oregano, basil, and garlic powder. Stir in dry potato slices. Cover and cook on LOW 4 to 5 hours.

Turn control to HIGH. Stir in cubes of mozzarella cheese. Top with Parmesan. Cover and cook on HIGH for last 10 to 15 minutes.
