Beef Flautas and Salsa
INGREDIENTS
•1 tbsp chili powder
•2 tsp paprika
•1 tsp oregano
•½ tsp each of basil, thyme, garlic powder, onion powder, salt, pepper
•1 lb thinly sliced sirloin steak
•3 tbsp safflower oil
•1 thinly sliced onion
•1 thinly sliced green pepper
•4 oz. Thinly sliced mushrooms
•12 soft corn tortillas
METHOD/PREPARATION
Blend all the herbs and spices together and lightly dust the meat with the mixture. Heat the oil and sauté the meat for 5 minutes. Remove the meat and reserve hot. Sauté the vegetables quickly in the oil. Wrap the meat and vegetables in the tortillas. Serve with salsa sauce. Serves 6
Salsa
Ingredients
•1 lb peeled and seeded tomatoes
•1 spanish onion
•3 crushed garlic cloves
•2 bunch chopped cilantro
•2 jalapenos
•1 green bell pepper
•2 tbsp lime juice
•½ tsp salt
METHOD/PREPARATION
Chop the tomatoes, mince the onion. Place in a mixing bowl along with the garlic and cilantro. Seed the jalapenos and dice fine, blend into the tomatoes. Remove the seeds and membrane from the green peppers, dice fine, stir into the tomatoes along with the lime juice, and add the salt. Chill 30 minutes before serving. Yields 4 cups.

Hot Beef Dip
INGREDIENTS
•5 oz. Smoked beef, chopped
•8 oz. Cream cheese
•2 tbsp. Milk
•¼ cup green pepper
•1 tbsp dried onion
•½ tbsp garlic salt
•¼ tsp pepper
•½ cup sour cream
METHOD/PREPARATION
Spread in pan. Bake for 15-20 min. at 350 degrees. Sprinkle with ½ cup chopped pecans that have been browned in 2 tbsp. Butter.
Dried Beef Roll Ups
INGREDIENTS
•1 quart medium dill pickles
•1 - 8 oz. Pkg. Cream cheese
•1 - 2 ½ oz. Pkg. Dried beef
METHOD/PREPARATION
Drain and dry pickles. Soften cream cheese. Spread cheese on all sides of pickles. Wrap in dried beef and then chill. Slice with sharp knife to serve.

Hawaiian Punch
INGREDIENTS
•1 (6 oz) ca frozen orange juice
•1 (6 oz) frozen lemon juice
•1 large can pineapple juice
•2 large cans Hawaiian punch
•1 box cherry jello
•1 pint of cold water
•1 quart of cold water
•1 quart ginger ale
METHOD/PREPARATION
Dissolve jello in water. Add all juices expect for ginger ale - add ginger ale as needed.
Afterward, try this delicious dessert.
Party Pudding
INGREDIENTS
•1 stick oleo
•½ cup chopped pecans
•1 cup flour
•½ cup powdered sugar
•8 oz. cream cheese
•9 oz cool whip
•2 pkg. instant pudding
•3 cups milk
METHOD/PREPARATION
Mix oleo, pecans and flour, press into 9x13 pan. Bake 15-20 min. at 350. Cool. Mix powdered sugar, cream cheese and cool whip. Spread over crust. Save about 2/3 cup. Mix pudding and milk until thick. Pour over cheese mixture. Beat remaining cheese mixture with more cool whip (about 1 cup) and enough milk to make the consistency of whipped cream. Spread over pudding. Refrigerate.
