What you will need:
5-6 lb bone in or out prime rib roast
10 garlic cloves
1 container of steak seasoning
3 cups of pistachios
1 large roasting pan
Good olive oil
Aluminum Foil
First you will need to peel and chop your garlic and set it aside. Take the pistachios and add them to a zip top bag crush them until they are into little pieces and add them to the garlic. Mix the pistachios, garlic and olive oil together until you make something that looks like a paste. You will need to take a knife a paring knife will do this fine and make several holes through through out the entire roast. Now that you have this done you will want to take the mixture that you made from the garlic, pistachios and olive oil and rub it over the top of the roast making sure that you cover it completely.
Preheat your oven to 450 degrees you will need to do this at first and lower the temp after having the roast in the oven for 20 minutes. After the 20 minutes is up turn your oven down to 300 degrees and cook until it is to your preference. Ours is medium rare and we usually keep it in the oven for about an hour. This will change depending on your oven...make sure that you have a way of telling the inside temp of the meat. We use a digital thermometer that has a probe which will allow it to beep when it has met the set time.
Take the roast out of the oven and allow it to rest for at least 10 minutes before cutting into it. This will allow for the juices to redistribute and make for a much nicer roast. Cut into portions and enjoy! Mmm cant wait to make mine this year.
