Easy Beef Stew for the Crock-Pot

This is my family's recipe for beef stew, and one of my favorite foods for those cold, rainy (or snowy) days!

Ingredients
2 to 3 lbs. beef stew meat, chopped into bite-sized chunks
1 medium onion, chopped
4 medium potatoes, peeled & cut into bite-sized pieces
3 carrots, peeled & chopped
2 stalks celery, chopped
2 whole bay leaves
3 small cans beef broth
1 tsp. salt
1 tsp. pepper
1 tsp. Worcestershire sauce

This is so easy - put everything into the crock-pot, cook on high for 5-6 hours or low all day (8-10 hours). DONE!

You can add a little beef bouillon (to taste) if you prefer.

Some people prefer a thicker stew - if that's the case use roughly 2 Tbsp of cornstarch mixed with a little hot water to thicken - but remember to stir quickly and constantly to avoid yucky corn starch lumps!!

This is a perfect soup to prepare ahead of time - the potatoes and other vegetables really soak up the flavor and are absolutely delicious the next day, or next week! You can even freeze it and eat it next month!

Serve with some sliced french bread or crescent rolls and you've created the perfect comfort food :)
