Beer Battered Alaskan Halibut
Ingredients:
1 can beer, flat (flat beer will make batter thicker)
2-2 1/2 pounds of fresh halibut, cut into sizes of your choosing (I like 2 bite-sizes but 1 if your sharing dipping sauce;)
1 cup (sifted) flour
1 tbsp paprika
1 tbsp salt
Deep fry Directions:
1. Pour beer into large bowl
2. Sift flour salt and paprika into beer
3. Stir with wire wisk until light and fluffy. (Use at once or let stand for several hours.)**
4. Flour fish BEFORE you put into batter to help keep batter together.
5. Fry no more than 2-3 minutes at 375 degrees.
6. Shake all oil off and place on cookie sheet.
7. Sit on rack with paper towels underneath to catch excess oil.
8. Put in oven on low heat (200 degrees) to keep warm while you finish cooking the remainding halibut.
**Whisk batter from time to time when using.**
Oven Cooked Option:
1. Follow steps 1-4 above.
2. Place on a lightly greased baking sheet - use non-stick cooking spray.
3. Bake at 450 degrees - 10 minutes or until fish flakes when tested with a fork. (You'll have to eat the testers, darn;)
So easy and yummy, albeit expensive. I recommend the beer battered alaskan halibut for a small dinner party. It's sure to be a big hit!!
