Beer Battered Crappie Nuggets

2 Pound Fresh Crappie Fillets

1 Cup of Bisquick

3 Eggs

1/2 Cup Beer

1/2 Tsp Salt

1/2 Tsp Black Pepper

1/4 Tsp Cayenne Pepper

1/4 Tsp Paprika

1/4 Tsp Thyme

1/2 Tsp Cooking Oil

Oil for deep Frying

Cut into Crappie Fillets into "bite sized" pieces. (About 1" X 2" or so)

In a separate bowl, mix Bisquick, eggs, beer, seasonings and 1/2 Tsp. of cooking oil together. You'll be looking for a pancake batter consistency, thin with beer as needed, thicken with more Bisquick if needed. (This is to your own preference)

Heat oil in deep fryer to 375 degrees. (If no thermometer, throw in a popcorn kernel, when it "Pops" the oil is hot enough. It's my Grandma's trick!)

Drop your bites into the batter and stir to coat them then use a fork to lift them out of the batter and place gently into the hot oil. Cook about 6-8 pieces at time for consistent browning.

Allow fish to cook for 1-1/2 to 2 minutes and tap them on the edges one at a time with your fork to make them turn over and the golden brown side will now be on top. (Cooking time may vary due to oil temperature and thickness of the fish.)

Continue cooking for about 2 minutes until golden brown. Remove fish and place on paper towel lined plate to drain.
