Beer and Thanksgiving The holidays are a great time to celebrate with a beer. Pair turkey (or tofurkey) with delightful local Chicago ale choices. Use beer as an ingredient in a dish or two. Roast turkey - as does other game birds such as goose or pheasant -- goes well with an American Brown Ale - Bell's Best Brown, for example -- the malts of the beer balancing with the moist meats. Also try them with a weizen, or better yet, a dunkelweizen. Piece Brewery makes a dunkel to die for, the Dark and Curvy. Your gravy can be made with beer in your broth, mixing a golden ale or kolsch - Piece's Golden Arm would work -- with the roux.
