Best Ever St. Patrick's Day Corned Beef Recipe in Crock Pot

Easy and Really Scrumptious Corned Beef

For years I tried to make Corned Beef for St. Patrick's Day and was unhappy. I thought I didn't like corned beef. Then, I found and revised the following recipe. This is the best corned beef I ever had. Try it this year. You may find that you actually like it.

1 onion, cut into quarters

4 potatoes, peeled and quartered

1 lbs baby carrots, cut as desired

3 cups water

3 garlic cloves, minced (or canned)

3 tablespoons sugar

2 teaspoons cider vinegar

1/2 teaspoon pepper

1 (about 3 lbs) corned beef brisk

Put all of this in crock pot.

Cook on low heat in crock pot for 8-9 hours. The meat should just fall apart easily. Take out, let cool about 10-15 minutes and serve. What a great holiday treat!
