4 lb Eggplant
dozen eggs
6 cups Italian style bread crumbs
6 cups oil
2 lbs parmesan cheese
3 large jars Spaghetti sauce (peppers or mushroom flavored)

Skin the eggplants and cut round side. Put on a big plates. You will need several. Put about 4 eggs in bowl and stir. But about 2 cups of bread crumbs in bowl. Heat up 4 cups oil in saucepan.Dunk eggplant in eggs and then bread crumbs. You can add eggs and bread crumbs as they disappear. Fill plates until all is done.Put eggplant in oil and brown both sides.Remove and let drain on paper towels.Get large baking dishes.Layer each dish with spaghetti sauce. Layer eggplant. Then more sauce and cheese. Make as many layers as fits in dish. I use at least two baking dishes. Cover with foilBake for 45 minutes at 350 degrees Fahrenheit. Remove foil and bake another 20 minutes.If having a party, these can be made a day ahead and reheated.
Tip
You may not need a dozen eggs, but it is best to have them.
