What's a barbecue without coleslaw? A grill is a low carb family's best friend, but you may miss the usual side dishes. You needn't worry. Coleslaw, a picnic favorite, lends itself easily to low carb living.

I took my time developing the coleslaw recipe below. I am picky about my coleslaw. Too many recipes are heavy on mayonnaise or vinegar. I also don't like coleslaw that is too wet or too sweet. This dish beats every store-bought or restaurant variety I've ever tried.

While you're in the produce aisle, you may be surprised to see packages of broccoli slaw. This shredded delight has a unique texture and flavor. My favorite broccoli slaw recipe is simple but delicious.

Best Low Carb Coleslaw

1/2 head of cabbage
1 T minced fresh onion
3 scoops of mayo (a little less than a cup)
Splash white vinegar
2 packets sucralose sweetener
1 packet True Lemon (or a small splash of lemon juice)
2 T cream
2 pinches salt
Lots of black pepper
1 pinch celery seed

Shred cabbage. Add onion. In a small bowl, combine other ingredients and mix well. Stir dressing into cabbage mixture. Refrigerate.

Makes 6-8 servings. Per serving: 225, total carbs: 4, net carbs: 3, protein: 1.25 (6-8)

Controlled Carb Broccoli Slaw

1 bag broccoli slaw
1 c mayonnaise
1 packet sucralose sweetener
1-2 strips bacon, cooked and crumbled

In a small bowl, combine mayo and sweetener. Adjust to taste. Stir into slaw. Refrigerate. Just before serving, add bacon.

Serves 6. Per serving: 5.5 total carbs, 2.5 net carbs.
