As a vegetarian for the past fourteen years, I've had to come up with some creative vegetarian barbecue recipes in order to participate in family and social gatherings. It's always difficult to find good vegetarian food at barbecues as traditional foods almost always include meat. Read on to discover the very best tried and true vegetarian barbecue recipes so you don't have to turn down that next invitation.

Vegetarian Barbecue Recipes - Barbecued Potatoes and Carrots

This delicious dish is one of my family's favorite vegetarian barbecue recipes. Potatoes and carrots are combined with barbecue sauce and slowly grilled to perfection.

Ingredients:

4 cups potatoes, thinly sliced

1 cup carrots, sliced or cubed

½ cup chopped celery

½ cup chopped onion

½ cup shredded cheese, optional

3 tablespoons flour

1 teaspoon salt

1 teaspoon pepper

Barbecue sauce of choice

Directions:

Combine vegetables and cheese in a large bowl.

Add flour, salt and pepper to coat the mixture.

Make eight aluminum foil pouches and divide the mixture between them.

Top with your favorite barbecue sauce, close the packs and poke holes in the top with a fork.

Place the packs on the grill and cook for twenty-thirty minutes or until veggies are tender.

This is one of the best vegetarian barbecue recipes for even the pickiest of eaters. If you like, you can use a different variation of veggies or whatever you have on hand.

Vegetarian Barbecue Recipes - Barbecued Stuffed Squash

This is one of my favorite vegetarian barbecue recipes and even meat-eaters take seconds of this delicious dish. This is going to become one of your new favorite vegetarian barbecue recipes.

Ingredients:

3 large acorn squash*

1 28 ounce can vegetarian baked beans**

4 tablespoons barbecue sauce

2 tablespoons maple syrup

4 tablespoons brown sugar

2 tablespoons butter

Shredded cheddar cheese, optional

*You can also use any other type of squash suitable for stuffing in this vegetarian barbecue recipe.

**You can substitute the can of baked beans for homemade vegetarian baked beans for this vegetarian barbecue recipe if you like.

Directions:

Cut each squash in half and scoop out seeds.

Combine baked beans, barbecue sauce, maple syrup and brown sugar together in a small bowl.

Fill each half of squash with an even amount of the mixture and top with ½ tablespoon of butter.

Grill the squash for about one hour or until the filling is bubbling.

My family likes to top these with shredded cheddar cheese and grill for an additional few minutes until the cheese melts.

Vegetarian Barbecue Recipes - Barbecued Sweet Corn

Corn on the cob is a barbecue staple and this is one of the most perfect vegetarian barbecue recipes for corn.

Ingredients:

4 ears of sweet corn

3 cloves garlic, minced

3 tablespoons barbecue sauce

1 teaspoon cayenne pepper

1 teaspoon chili powder

Directions:

Grill the ears of corn normally until done, usually about 25-30 minutes.

Mix the garlic, barbecue sauce and spices in a small bowl.

Drizzle the mixture over the ears of corn.

Vegetarian Barbecue Recipes - Veggie Kebabs

You can't have a barbecue without the kebabs. This is one of the best vegetarian barbecue recipes for kebabs and makes a delicious addition to any backyard barbecue.

Ingredients:

2 large onions cut into 1" pieces

2 large bell peppers cut into 1" pieces

2 large potatoes cut into 1" pieces

2 large tomatoes cut into 1" pieces

2 tablespoons lemon juice

2 tablespoons olive oil

2 tablespoons water

½ teaspoon basil

Salt and pepper to taste

Directions:

Combine lemon juice, olive oil, water, basil, salt and pepper in a small bowl.

Put veggies onto 8" bamboo skewers, alternating pieces, and then coat with the lemon/oil mixture.

Cook on the grill for 15-20 minutes or until veggies are tender.

Vegetarian Barbecue Recipes - Vegetarian Barbecue Beans with Potatoes

A barbecue just wouldn't feel right without beans. If you don't want to use the canned variety, follow this recipe, one of the best vegetarian barbecue recipes, for fabulous homemade barbecue beans.

Ingredients:

4 medium potatoes

2 cups black beans, prepared according to package instructions*

¾ cup barbecue sauce of choice

2 tablespoons vegetable oil

*You can use any variety of beans you like for this vegetarian barbecue recipe. My family prefers black beans as they compliment the potatoes nicely.

Directions:

Brush the potatoes with vegetable oil and cut into slices. Grill for about 15 minutes, turning once.

While the potatoes are grilling, combine the beans and barbecue sauce. Warm over medium-low heat.

When potatoes are done, top them with the bean/barbecue sauce mixture and serve immediately.
