VegWeb is one of my favorite vegetarian and vegan cooking and recipe websites because it is totally user-based. Almost any dish that you want to make is available on VegWeb. One of the best aspects of the website is that the recipes are also user-rated, which means that you can select recipes based on the highest star rating. This can be really important in vegan baking because, if you haven't noticed, vegan baking can be quite difficult and sometimes hit-or-miss.
101 Cookbooks

Great for: Beautiful photos, cookbook recipes
101 Cookbooks is a vegetarian blog that emphasizes natural and whole foods. The creator of the blog chooses recipes from her many cookbooks to feature. Because the recipes come from cookbooks, they often are very dependable with great instructions. The photos featured on this vegetarian blog are also beautiful.
EatYourVegs

Great for: Eclectic dishes, beautiful photos
EatYourVegs is a vegetarian and vegan blog which is run by two students who love to cook. The best thing about this blog is that the recipes featured are really very eclectic-- one day you'll find a truly American dish like baked mac and cheese, and the next you'll find a recipe for a delicious middle eastern dish. Check the website every few weeks because each post is distinctive and delicious looking.
Vegetarian Times

Great for: Tested recipes, great variety
The Vegetarian Times website is based off of the monthly magazine (also highly recommended!). The recipes are user rated, which means there are lots of comments to consider. The website is also very easy to use-- you can tell the built in search engine to find egg-free, vegan, low-fat, gluten-free, low-cal vegetarian recipes. If you're stuck and don't know what to cook for dinner, this is a great vegetarian website to visit.
