Biscuit Mix and Biscuits

6 cups flour
3/4 c. milk
1 cup shortening
3 Tbsp. baking powder

Mix

Mix together flour, salt and baking powder, then using a pastry blender cut in shortening until the flour mixture and shortening are cut into fine pieces. Store in an air-tight container at room temperature.

Homemade Biscuits

2 1/2 cups biscuit mix
3/4 c. milk

Take biscuit mix and slowly add milk, stirring until well blended.

Knead the dough on a lightly floured board until well mixed. Roll out dough in 1/8 thickness. Then using a 2 inch biscuit cutter, cut out the biscuits. Put the biscuits on a cookie sheet and bake at 450 degrees for approximately 12 to 15 minutes until lightly golden brown.

Sweet Potato Biscuits

2 1/2 cups biscuit mix
1/2 cup milk
5 1/3 Tbsp. butter, softened
1 cup mashed sweet potato (you can use cooked sweet potato or canned)

Mix together the sweet potato, biscuit mix, milk and butter, mix well.

Place the dough on a floured board. Take and roll into a ball and roll in the flour to coat all sides.

Knead the dough 4 or 5 times. Roll out to a 1/2 inch thickness. Cut out biscuits with a 2 inch biscuit cutter (dipping the biscuit cutter into flour).

Place the biscuits on a cookie sheet and bake at 400 degrees for approximately 10 to 12 minutes until golden brown.

*** You can substitute skim milk for whole milk and then add 1 tsp cinnamon
