Black Bean Salsa Recipe with Pita Chips

Black bean salsa is so healthy and delicious! Make it with the freshest ingredients and you can't go wrong with this recipe. You are sure to be a hit at your next pitch in lunch. Everyone will be asking you for this amazing recipe. It is so simple and amazing that you will want to make this salsa all of the time. Serve this great black bean salsa with homemade pita chips. Ingredients:

1 can (14 1/2 oz) black beans, rinsed and drained

1 cup grilled corn sliced off the cob(gives a smoky flavor to the dish) or use frozen if fresh ingredients aren't available.

1 large tomato, chopped (for fun use striped tomatoes in season)

1/4 cup chopped green onions

2 tablespoons chopped fresh cilantro

2 tablespoons lemon juice

1 jalapeno seeded and chopped

1 tablespoon olive oil

1 teaspoon chili powder

1/4 teaspoon salt

Directions:

Combine beans, corn, tomato, green onions, cilantro, lemon juice, jalapeno, oil, chili powder and salt in medium bowl.

Mix well and chill. Serve with baked pita chips.

* Pita chips can be purchased at your local supermarket, or you can make your own and save on calories and unnecessary fat and additives.

RECIPE FOR PITA CHIPS-

Buy one package of whole grain pita bread. (these are round slices of flat bread).

Cut the pita into four equal parts. It will look like four triangles when you are done. Peel apart each triangle to create your chips. Lay on a non stick baking sheet and spray with non fat cooking spray. Sprinkle chips with coarse salt, pepper, and garlic salt if you like. You can even spice them up with a little cayenne pepper. Bake in the oven at 400 degrees for 5-8 minutes. Check them at five minutes to see if the edges are beginning to brown. Pull them out just as the edges begin to brown for a heartier chip. If you want a crispier chip, leave them in longer. Let them cool slightly and serve. Enjoy!
