I have been fortunate to be able to pick blackberries from bushes that grow on our property. They just grow wild in places you would not expect and seem to appear without any advance notice. This year there has been abundant rain and the berries grew along any untended area. The bushes are lush with foliage and the berries are plentiful and large. Picking enough berries to make a fresh cobbler took only a few minutes.
The following recipe is quick, easy and the flavor is delightful.
Blackberry Cobbler
Ingredients:
1 quart blackberries
Sugar to sweeten
1 cup flour (white or whole wheat pastry)
½ tsp salt
1 ½ tsp baking powder
¼ cup granulated sugar
2 Tsp. melted butter
½ cup milk
Instructions:
Wash the berries, drain and place them in a bowl. Taste a few berries to determine the sweetness. Sprinkle the berries with sugar and mix to cover. Taste the berries to determine the desired sweetness. Place the sweetened berries in the bottom of a greased deep dish pie pan or casserole.
Combine the remaining ingredients in a medium mixing bowl. Mix well. Scrape the contents from the bowl onto the top of the berries in the pie pan. Spread the mixture over the berries to cover the top completely.
Bake in a 375 degree oven for 35 to 45 minutes until the top lightly browned. Remove from the oven and serve warm or chilled.
This cobbler is great warm with vanilla ice cream, warm covered with milk, or served plain either warm or cold. It is delicious not matter how it is served.
