Blackberry cobbler is a favorite southern dessert easily made from either fresh or frozen berries and a few simple ingredients. Blackberries contain 2 grams of protein and 8 grams of fiber per cup. Blackberries can be a good snack for diabetics as they have a lower carb count than many fruits. Blackberry cobbler can be prepared in many different ways. These three blackberry cobbler recipes are all good ways to serve this tasty fruit.

Blackberry Cobbler Recipe: Easy Preparation Type
Begin by preheating your oven to 350 degrees, Melt one stick of butter in a 1 ½ quart casserole dish. Mix together:
1 Cup of self-rising flour
1 Cup of sugar
1 Cup of milk
Stir until well mixed and then pour in dish over melted butter. Finish the blackberry cobbler by adding 1 1/2 Cups of blackberries over the previous mixture. Do not stir. Bake for 45 minutes.

Blackberry Cobbler Recipe: Baking Mix Type
This Quick Blackberry Cobbler recipe uses a baking mix rather than flour.
Ingredients
1/2 cup milk
2 tsp. oil
1/3 cup sugar
1 cup baking mix
2 cup blackberries
2/3 cup sugar
1 cup water
Mix first four ingredients. Pour into greased 2 quart casserole dish. Mix blackberries, sugar and water. Pour over batter. Bake at 375 degrees about 45 minutes.

You can also prepare either of the above blackberry cobblers in a Dutch Over over a campfire.

Blackberry Cobbler Recipe for the Campfire
Prepare hot charcoal embers. Butter your Dutch Oven. Mix according to the above directions, adding items to the Dutch Oven. Place oven on the coals and add hot coals on top of the oven lid. Bake 20 minutes. Do not remove lid until ready to serve as the steam helps the blackberry cobbler to cook.

Blackberry Cobbler Recipe: Lattice Pie Crust Type
Preheat the oven to 425 degrees . Prepare your favorite pie crust recipe for a double crust pie. You may also choose to buy two premade pie crust to use with your cobbler. Place one crust in the pie tin. Prick fork holes into the bottom to keep the crust from bubbling up while baking. Mix the following ingredients:
6 c. fresh blackberries
1 cup. sugar
1/4 cup flour
1 tbsp lemon juice
Let mixture stand until berries start to form a juice. Pour into pie crust.
Use the second pie crust to cut into strips and form a lattice type topping. Use one stick of butter, cut into chunks to drop into each of the holes of the lattice top.
Bake for 30 to 40 minutes until the crust is golden brown

No matter which variation of blackberry cobbler you choose to make, the result should be a pleasant experience with a nutritious fruit. Splenda may be substituted for the sugar to decrease the calorie and carbohydrate count.

    Please I'm on a low carb diet! Stop! No I know berries are the lowest in carbs of fruits. But it's the crust. Yummy recipe.
