List of Ingredients
1. 1/2 of cup shortening
2. 1 cup of packed brown sugar
3. 2 medium eggs well beaten
4. 1 cup of all purpose flour
5. 1/2 teaspoon of baking powder
6. 1 pinch of salt
7. 1/2 cup of mixed berries (blue berries, black berries, strawberries)
8. 1 tablespoon milk
9. 1/2 cup of chopped walnuts
Directions
1. Preheat oven to 350 degrees
2. Grease and flour one 8x8 inch pan thoroughly.
3. Mix shortening, cup of brown sugar and eggs together in a large bowl. Mix them well until the mixture looks as if you are using it as mixture for an omelet.
4. Stir the flour, the baking powder and the salt in with the egg mixture. Make sure there are no lumps and the mixture is smooth. Add the milk to the mixture and stir until the milk fits in with the mixture.
5. Empty berries on a counter or cutting board. Chop the berries until they are minced. Take the chopped walnuts and the berries and drop them in the egg mixture. Stir throughly until nuts and berries are spread out throughout the mix.
6. Spread contents evenly into prepared pan. Make sure berries and nuts are evenly spread out in the pan.
7. Bake at 350 degrees for 20 to 25 minutes or until fork comes out of the brownie clean.
8. Allow the brownies to Cool for 15 minutes
9. Cut into 2x2 inch squares and enjoy!
These brownies are unique in taste. The mixture of fruit and nuts in a cake like snack is very delightful. This recipe was passed down through a few generations all the way to my generation. When I first saw the brownies I was shocked at the color and questioned what I was about to eat. I was assured these would be great and after trying it I was pleased. This goes well with vanilla Ice cream either on the side or making an Ice cream sandwich with two brownies and a scoop of vanilla Ice cream. Using the Ice cream as a dip for the brownies also. You can sprinkle some chocolate chips in with the Ice cream and have a extra flavor to enjoy with your snack! Great snack for children and adults.
