Blueberries: Improve Your Health the Tasty Way

Blueberries are a great fruit to add to your diet because of all the amazing health benefits it provides in addition to great flavor. It contains Vitamin C, Vitamin E and Vitamin K. Blueberries can reduce bad cholesterol and reduce your chances of heart disease. To maintain good eye sight, blueberries can be consumed to prevent eye diseases or infections. A constant consumption of blueberries can have positive effects on the brain and prevent dementia and Alzheimer's. Also, you can eat blueberries to give a boost to your immune system. By doing this, you can prevent many bacterial infections. Blueberries also contain anti-blood clotting properties. If you are prone to getting urinary tract infections, then adding blueberries to your diet will help stop the growth of bacteria.

This berry is great for keeping your skin looking young and fresh. It contains lots of anti-oxidants which are great for the skin because they attack free radicals. Free radicals are neutralized which could prevent cancer. In addition to prevented cancer, blueberries can do good for the brain. They can improve your capacity to learn. Overall, blueberries are a great way to give your health a natural boost, keep you looking young, and prevent disease.

Blueberry Banana Bread

½ cup blueberries

1 cup mashed bananas

½ cup instant oats

2 eggs

½ cup chopped walnuts

1 5/8 cups flour

1 cup sugar

½ cup shortening

1 teaspoon baking soda

• Preheat oven to 350 degrees.

• Grease and flour a 9x5 inch loaf pan

• In a medium sized bowl, coat blueberries in 2 tablespoons flour and then mix them with the oats, walnuts, 1 ½ cups flour, salt and baking soda.

• In a separate bowl, cream sugar into shortening until fluffy.

• Add eggs in one at a time.

• Blend in mashed banana and blueberry mixture. Spoon the batter into the loaf pan.

• Let bake for about 50 minutes. Let cool for 10 minutes before removing from pan. Cool again on a wire rack.
